Hello! Seeing as it’s Sunday it’s time for a warm, comforting breakfast. I’m warming up to oatmeal more and more these days and one of my favourite things to have in it is peanut butter. It’s so delicious. What more is there I can say? It makes almost everything taste better and it’s good and wholesome. This oatmeal combines that good taste with chocolate, bananas and a little bit of maple syrup. So simple, but so good.
serves 2 Ingredients
1 cup gluten-free rolled oats
1 cup non-dairy milk
1 cup water
3 tbsp natural peanut butter
3 tbsp unsweetened cocoa powder
pinch or two of salt
1/2 tsp vanilla
2-3 tbsp maple syrup
2-4 tbsp hemp hearts (optional)
1 banana sliced for serving
chocolate chips for serving (optional)
Add all the ingredients except the banana and chocolate chips to a pot and stir to incorporate. Heat on medium.
Allow this to heat up for several minutes stirring often. Once it starts to bubble and spurt a bit, you may want to reduce the heat to medium low, or simply stir more often. If it burns or sticks, you can turn the heat down at any point
Altogether, this will cook for around 8-10 minutes. If you want a thinner texture add a little more non-dairy milk.
