I’m such a huge pasta lover. I think about it all the time and I’m always trying to find new ways to enjoy it. And this is going on the list of enjoy. A simple, sweet garlicky and flavourful pasta. One of the things I look to do is make sauces that take as long as the pasta does to prepare. This sauce comes together in less time. I mean how easy is that? It’s great and perfect for any weeknight, so here is how it goes:
serves 3-4 Ingredients
about 1 454g box of pasta (your choice)
juice of 1 lemon
1-2 tbsp maple syrup or other liquid sweetener
2 large cloves of garlic
1 tbsp olive oil
pinch or two of salt
several dashes of black pepper
dash or two of cayenne
several dashes of dried oregano (at least 4-5)
2 dashes paprika
2 tsp- 1 tbsp nutritional yeast (optional)
Cook the pasta according to the box instructions. While it’s cooking, mince your garlic, and add it to a frying pan with the olive oil and cook over medium heat.
Cook the garlic for at least 2 minutes, stirring it occasionally. You can add the lemon juice and spices (minus nutritional yeast) along with the garlic to a blender and blend until smooth. This is optional. Mix the lemon juice and spices together in a bowl if you want to skip the blender. You can leave the garlic as is and keep it in the pan until the pasta is ready, but you may want to reduce the heat.
Add the pasta to the frying pan after it has been drained. Add in the sauce and stir around. If you find it’s a bit runny, cook it in the frying pan for a couple of minutes and add a little bit of nutritional yeast for texture.
Remove from heat and serve.
