Sun Dried Tomato Red Pepper Pasta

If you’re bored of just plain old tomato sauce, or just want a change, this is an easy refresher. The sun dried tomatoes add such a nice flavour and the red peppers lighten it up a bit. It’s only 7 ingredients plus pasta so you have no excuse not to make it. Red peppers can be just as good as tomatoes.

Aside from the flavour I also love how easy this sauce is to prepare! Just a bit of oven time, a bit of blending and then you pour it all over pasta. You’ve got yourself an easy, homemade meal that tops any store bought sauce. Peppers cook much faster than tomatoes but that’s a secret you don’t need to share with anyone you’re cooking for….

Sun Dried Tomato Red Pepper Sauce

This is a fun twist on tomato sauce. The sun dried tomatoes add such a wonderful deep, salty flavour that goes so well with roasted peppers. If you've never had this combination, now is a great time to try it!

  • 1/2 cup sun dried tomatoes
  • 2 red peppers
  • 1 small yellow or sweet onion
  • 1/2 teaspoon salt
  • several dashes of black pepper to taste
  • 3/4 teaspoon dried oregano
  • 1 cup vegetable broth
  • 1 box spaghetti or penne pasta


  1. Preheat the oven to 450 F. Line a baking sheet with parchment paper then cut the stem out of the pepper and slice the onion. Spread them out on the baking sheet and don’t worry about cutting everything perfectly because it will get blended later.

  2. Bake for 15 to 20 minutes, watching the onions don’t burn. Add 1 cup of broth and the tomatoes and spices to the blender. Add in the coked vegetables and blend until it is mostly smooth. You may need to add in a bit of extra broth so you don’t wear out your blender.

  3. Cook pasta to box instructions and add the sauce to it once it has been strained. Stir well to coat then serve into as many portions as you like. Or you can store it in a container for later use.
