If you’re bored of just plain old tomato sauce, or just want a change, this is an easy refresher. The sun dried tomatoes add such a nice flavour and the red peppers lighten it up a bit. It’s only 7 ingredients plus pasta so you have no excuse not to make it. Red peppers can be just as good as tomatoes.
1/2 cup sun dried tomatoes
2 red peppers
1 small onion
1/2 tsp salt
several dashes of black pepper
lots of oregano around 1/2-1 tsp
1 cup with 1-3 extra tbsps vegetable broth
1 box pasta
Preheat the oven to 450F. Line a baking sheet with parchment paper then cut the stem out of the pepper and slice the onion. Spread them out on the baking sheet and don’t worry about cutting everything perfectly because it will get blended later.
Bake for 15 to 20 minutes, watching the onions don’t burn. Add 1 cu of broth and the tomatoes and spices to the blender. Add in the coked vegetables and blend until it is mostly smooth. You may need to add in a it of extra broth so you don’t wear out your blender
Cook pasta to box instructions and add the sauce to it once its complete.
Serve or store the sauce.
