My favourite drink besides water is coffee. I know I’m not exactly the most adventurous drinker but nothing taste better! Coffee is also great in desserts and these cookies are the proof. A bit of coffee flavour and chocolate chips, can you imagine how good this fresh from the oven? You’ll have to make them to find out but it’s good. I made them simple and with basic vegan ingredients; that means they are easy to make for vegans and non-vegans alike and not overly expensive. They’re soft and chocolatey by the way…
makes 24 cookies Ingredients
1 cup brewed coffee (cooled)
1 cup vegan brown sugar
1/2 cup soy-free vegan butter
1 1/2 tsp vanilla extract
1/2 tsp salt
1 tsp baking powder
2 1/4 cups unbleached all purpose flour
1 cup vegan chocolate chips
Preheat oven to 350F
In a large bowl add the sugar and butter. Beat with a hand mixer until combined. Add in the coffee and vanilla and beat until it’s blended although it will be a little lumpy potentially.
Add in the flour, baking powder and salt to the same bowl and beat until combined. Stir in the chocolate chips
Line a baking sheet with parchment paper. Use a tablespoon or cookie scoop because the dough is soft to scoop it onto the sheet. I recommend 1 heaping tablespoon per cookie.
Bake for 11-14 minutes then let cool on the baking sheet.
You may need to bake them in batches if you don’t have two ovens, or if baking at the same time keep in mind they baking time will need to be adjusted and will be a couple of minutes longer
