This is a very important post. Quinoa is incredibly nutritious and yet it takes me forever to finish a bag. Is it just me, or can it be overly bland? I’m on a mission to eat well and that means quinoa fits right in, but it’s hard to enjoy it. That’s why I’ve made this basic recipe to flavour and make quinoa scrumptious. This is so simple, that’s why I’ve called it a hack because all of the ingredients are really just tips. You can add what you want based on what you have on hand and what you like. It’s perfect for using up leftovers or creating an abundance so you actually have leftovers. So if you’re like me and hate quinoa, make this and you might be changing your mind.
1 cup quinoa dry or 3 cups cooked
1 sweet onion
3 cloves garlic
3 roma tomatoes
1 red pepper
1 tbsp oil (avocado, olive)
1/2-3/4 salsa or tomato sauce (1/2 for light flavour, 3/4 for strong)
1 can black beans or chickpeas
1/2 tsp salt or to taste
several dashes of paprika
several dashes of black pepper
Cook the quinoa as the package directs you and start prepping your vegetables. Dice the onion, tomatoes and pepper. Mince the garlic. In a large frying pan add the oil and heat on medium, adding in onions and garlic.
Let those cook for about 2 minutes, then add in the tomatoes. Let this cook for a couple minutes more then add in the red pepper. Stir this every so often and reduce the heat if you need it. Cook this for around 10 minutes or until the onion because very soft.
Drain and rinse the beans and add them to the pan. Once the quinoa is ready add it and stir everything. Add your spices and stir once again. Finally, add your salsa or tomato sauce and stir (surprise) to incorporate it.
Simmer for a minute then serve or let cool to store
*You can add in whatever vegetables you like to this. My advice to you is to bulk it up with your favourites, or disguise the ones you don’t like by adding a bit more sauce. Take this easy and go with what you have.
