Barbecue Fries

This is an easy weeknight dinner you can throw together quickly when you’re craving a bit of junk food. Or you can have it on the weekend, when you’re also craving some junk but don’t want to put in the effort of making fancy vegan ground beef. It’s just so simple, I can’t stress that enough. I love cheating and using store bought vegan meats, particularly Gardein brand. They are my favourite! I’ve made their chick’n tenders for non vegans and they agree that they are better than chicken fingers. Their beefless ground is also delicious and I highly recommend using it for this recipe.

serves 2 as a main, 4 as a side Ingredients

4 large potatoes (any kind)
1 tbsp olive oil
1/2 tsp salt or to taste
1 package vegan ground round
1/2 cup vegan barbecue plus extra if needed
1 avocado, diced
black pepper to taste

Preheat oven to 430F and line two baking sheets with parchment paper.

Wash your potatoes and cut them into fry shapes. You can find better instructions for cutting in my Perfect Fries recipe.

In a large bowl add the fries and olive oil and toss to cover them. Line and space the fries out well on the baking sheets then place in the oven and bake for 20 minutes . Remove and flip then bake again for 18-20 minutes, watching to see they don’t burn.

During the second cooking session of the fries prepare the ground round as the package instructs you. After it has cooked, add 4 tbsp barbecue sauce or 1/4 cup to it and stir. Let this cook one minute more.

Portion the fries out evenly onto your eating plates. Scoop some ground round out on top of the fries on each plate. Next, top with 2 to 3 tablespoons of barbecue sauce per plate. Add the avocado and sprinkle some black pepper on to taste. Serve with a fork and hot!
