These cups are so easy and delicious! I find myself missing the convenience of buying chocolate bars so I love recreating chocolates at home. For me they need to be easy, and as tasty as anything I can get at the store. These are all that and more. The dark chocolate takes it to a whole new level. I feel sorry for anyone who thinks milk chocolate is superior; there is nothing like tasting real chocolate. So grab your wrappers and vegan marshmallows and get this started!
Makes 8 cups
Ingredients
1 bag of vegan mini marshmallows (you will not be using these all but it’s good to keep a bunch on hand so you can add as much you want.)
1/2 cup vegan chocolate chips (Enjoy Life mini chips work really well for melting)
1 tsp soy-free vegan butter
1-2 tsp non-dairy milk
Instructions
In a microwave safe bowl, or double boiler, melt the chocolate chips and vegan butter. If you are doing this in the microwave start with 30 seconds, then remove the bowl and stir. If the chocolate is still not melted add 1 teaspoon of the milk and microwave for 15 more seconds, remove again and stir, and if it is still not melted add in the next teaspoon of milk and microwave for 15-20 seconds again.
In a separate bowl pour some marshmallows in. This isn’t necessary but it makes it easier to grab the marshmallows. Line a mini muffin tray or plate with 8 mini muffin cups or candy wrappers.
For each cup, take approximately half a teaspoon of chocolate and line the bottom of each cup, spreading it around and up the sides also so the marshmallows won’t fall out when you put it in. Make sure the bottom has no holes.
Next, take 4 or 5 mini marshmallows per one cup and push them into the base of each cup. Repeat until all 8 have marshmallow fillings.
Using approximately half teaspoon again, coat the tops of the marshmallow cups. Don’t worry if some of the marshmallows are popping out they add a nice charm to the look. The goal is to have enough chocolate to hold the marshmallows in but they don’t need to be perfect.
Place these in the fridge or freezer and let them chill for around an hour. You must store them in at least the fridge so they don’t melt. Enjoy!
You could also use large marshmallows and cut them in half and you will be able to cover them completely so the cups look clean.
You could even add in some sliced nuts to make them Rocky Road cups!
